- 6 cups potatoes (approximately 8-9 golden potatoes, cooked and diced. We used Golden potatoes washed, do not peel. Boil until tender.)
- 4 Tbsp. butter (I used salted butter but you could have used unsalted)
- 1/3 cup milk (any variety)
- 1 tsp. salt
- 1 tsp. garlic powder
- 1 tsp. minced garlic
- 1 tsp. celery seeds (ground)
- 1/2 tsp. ground pepper
- 1/2 cup chopped onion (we used red onion but you can use white or sweet onion as well)
- 1/2 cup chopped bacon (more for topping, you can use bacon bits)
- cheese
- 2 cups colby jack
- cheddar
- 1 cup sour cream (full fat or reduced fat.)
