- 2 jalapenos (small, diced, I left seeds in 1 for heat, but feel free to add more or less seeds to your liking)

- 1 packet taco seasoning (or 2 1/2 Tablespoons of homemade taco seasoning)
- 1 can tomato sauce
- 1 can kidney beans (drained)
- 1 can diced tomatoes (drained)
- salt (to taste)
- 2 Tbsp. butter (thinly sliced)
- 1 tsp. kosher salt
- 1/4 tsp. black pepper
- 3 green onions (chopped)
- 3 cups shredded sharp cheddar cheese (divided)
- sour cream (for serving)
