  • 1 tablespoon butter (optional, original recipe called for 2 T and next time I would leave out the butter)
  • 1/2 cup low-fat sour cream (do not use fat free)
  • 1/4 cup green onions (minced)
  • 1/4 cup grated Parmesan cheese (freshly)
  • 6 slices bacon (cooked very crisp and crumbled)

    Love it! It's the new mashed potatoes! SN: Sour cream makes it soupy, so I used about half and sprinkled a handful of dry cornbread stuffing to the mix to make it more like a casserole. Perfect!
