- 8 large eggs
- 1 Tbsp. fresh basil leaves (chopped, or parsley or 1/2 tsp dried basil or parsley leaves, crushed)
- 1/4 tsp. ground black pepper
- 1/2 cup grated Parmesan cheese
- 1 Tbsp. olive oil
- 1 onions (small, thinly sliced)
- 1/2 cup small red potatoes (thinly sliced, about 3 or 4, or 1 can, 15 oz., sliced potatoes, drained)
- 1/2 cup sliced mushrooms
- 1 cup Ragu® Old World Style® Pasta Sauce, heated (heated)

Directions
- In small bowl, beat eggs, basil and pepper. Stir in cheese; set aside.
- In 10-inch nonstick skillet, heat olive oil over medium-high heat and cook onion, potatoes and mushrooms, stirring occasionally, 4 minutes or until tender. Reduce heat to low and add egg mixture. With spatula, lift set edges of frittata, tilting pan to allow uncooked mixture to flow to bottom. Cover and cook 20 minutes or until frittata is set. Invert onto serving plate and serve with Pasta Sauce.
