- 2 1/2 Tbsp. vinegar (balsamic, red wine vinegar, or sherry vinegar)
- 1/2 tsp. salt (and pepper)
- 1 Tbsp. shallot (very finely chopped)
- 1 tsp. whole grain mustard (optional)
- 2 handfuls baby arugula
- 14 oz. white beans (about ¾- 1 cup rinsed, drained)
- 1 can white albacore tuna in water (drained)
- 3 radishes (grated, finely sliced or cut into matchsticks)
- 10 cherry tomatoes (or sub 1 turkish cucumber)
- 1/4 cup Italian parsley (chopped)
- 1 scallions (sliced, or sub red onion)
- 1 Tbsp. capers (or sub olives!, optional but delicious)
- sunflower sprouts (optional but delicious)
