  • 2 tablespoons olive oil
  • 1 sweet onion
  • 1 zucchini (medium, coarsely chopped)
  • 1 clove garlic
  • 14.5 ounces plum tomatoes (whole peeled, undrained and chopped)
  • 1/4 cup dry white wine
  • 1 pound cod
  • 12 mussels
  • 2 tablespoons finely chopped fresh parsley
  • 1 knorr vegetarian veget bouillon cube (crumbled)

    Directions

    1. Heat olive oil in deep 12-inch nonstick skillet over medium-high heat and cook onion and zucchini, stirring occasionally, 4 minutes. Add garlic and cook 30 seconds. Stir in tomatoes, wine and Knorr® Vegetarian Vegetable Bouillon Cube and simmer 2 minutes. Arrange cod and mussels in skillet. Simmer covered 8 minutes or until fish flakes with a fork and mussels shells open. Discard any unopened shells. Sprinkle with parsley and serve with warm crusty bread.
