- 2 1/2 cups low sodium chicken stock
- 3 cups half and half (plus more if needed)
- 10 oz. cavatappi pasta (see note below)
- 1/2 tsp. granulated garlic
- 1/2 tsp. granulated onion
- 1/2 cup parmigiano-reggiano (grated)
- 1/2 cup freshly grated Pecorino Romano cheese
- 3/4 cup part skim mozzarella (shredded)
- 1 bag baby spinach (fresh, about 4 loose cups)
- 1/4 cup basil leaves (torn)
- 1/4 cup chopped flat-leaf parsley
