- 1/4 cup warm water
- 1/4 cup red wine vinegar
- 1 Tbsp. grated Parmesan cheese
- 2 tsp. Dijon mustard
- 2 tsp. minced garlic
- 1/4 cup loosely packed fresh basil leaves
- 1 Tbsp. fresh oregano leaves
- 1/4 cup extra-virgin olive oil
- salt
- pepper
- chicken (for marinating, I used about 1 lb. boneless, skinless chicken breasts)

Fantastic. I doubled the basil and garlic and marinated for about 24 hours. Nice flavor, balanced and not overwhelming and chicken was tender and juicy.

This is the best marinade, and salad dressing I’ve ever made. Was looking for something different. I made one batch without and one with the Parmesan. This will be my go to marinade for years to come.
