- 2/3 cup quinoa (uncooked, this will make about 2 cups cooked)
- 2 cups cucumber (diced)
- 1 1/2 cups cherry tomatoes (halved)
- 1 cup spinach (shredded, or baby greens)
- 2 cups beans (cooked, choice, Great Northern beans, white navy beans, kidney beans and chickpeas are all great)
- 1 roasted red bell pepper (large, cut into strips)
- 1/4 cup sundried tomatoes (soaked in hot water for 10 mins to rehydrate)
- 1/4 cup red onion (very thinly sliced)
- 2 Tbsp. fresh parsley (finely minced)
- 1 Tbsp. fresh basil (finely minced)
- 1 tsp. seasoning (dried Mediterranean, or blend of Italian herbs)
- 2 Tbsp. extra-virgin olive oil
- 3 Tbsp. balsamic vinegar (dark)
- 1 tsp. Dijon mustard
- sea salt
- black pepper
