  • 1/2 cup water (300ml)
  • 1/4 red lentils (a cup of split)
  • 6 carrots (700g)
  • 6 tablespoons coconut milk
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 tablespoon herbs (mixed, I use herbs de provence)
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon mustard seeds
  • salt
  • pepper
  • 1 can beans (cannellini, beans, 400g)
  • chestnut mushrooms (a dozen)
  • 2 cloves garlic
  • 1 tablespoon dried herbs

    Very well even though I did not add any oil. I cooked all herbs/spices with carrots and lentils in veg stock except for dry frying mustard and cumin seeds.
