- 2 lemongrass stalks (white part only, roughly chopped)
- 6 cms ginger (piece, peeled, roughly chopped)
- 2 red chillies (long, according to taste; remove seeds for less heat, roughly chopped, plus extra to serve)
- 2 shallots (finely chopped)
- 4 garlic cloves (roughly chopped)
- 1 lime (then lime cut into wedges to serve)
- 2 Tbsp. sunflower oil
- 400 mL coconut cream (do not shake)
- 3 tsp. ground turmeric
- 2 cups fish stock
- 1/4 cup fish sauce
- 1 Tbsp. brown sugar
- 200 grams green beans (trimmed and halved)
- 400 grams white fish fillets (skinned then boned firm, cut into 5cm pieces)
- 200 grams grape tomatoes (halved)
- 200 grams vermicelli (bean, cooked according to packet instructions)
- Thai basil leaves (to serve)
