- 1 onion (medium, 3/4 of 8 oz cup, about 3, finely chopped)
- 1 tsp. paprika
- 1 tsp. cumin seeds
- 1 cup red lentils (washed and picked over)
- 1 1/2 Tbsp. tomato paste
- 6 cups water (or stock, or more if the soup thickens too much)
- 1/4 tsp. red pepper flakes
- 1 1/2 Tbsp. mint leaves (dried, crumbled)
- 1 Tbsp. sumac
- salt (to taste)
- 1 carrot (2. 1, chopped, optional – I have not used carrots in this soup)
- 3 mint leaves (optional, sumac)
