- 2 slices whole grain bread
- 1/2 cup baby spinach (lightly packed fresh, I use organic! you should too!)
- 1/4 cup roasted red peppers (not packed in oil thickly sliced)
- 2 fresh basil leaves (large)
- 2 oz. boneless skinless turkey breasts (no salt added, fat free, I used some from my deli, 2 slices weighed to 2 ounces)
