- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 Tbsp. minced ginger (substitute 1/2 tsp ground)
- 1 rib celery (sliced)
- 2 cups butternut squash (8oz, 250gr, cut into small bite-size chunks)
- 4 tsp. olive oil
- 2 Tbsp. teriyaki sauce
- 1 Tbsp. soy sauce
- 2 Tbsp. orange juice
- 3 Tbsp. dry sherry
- 2/3 cup chicken stock (5oz, 150ml)
- 1 Tbsp. cornstarch (Maizena dissolved in 2 tbs water)
- 1/2 cup basmati rice (3.3oz, 95gr)
- 1 cup chicken stock (8oz, 240ml, or whatever your rice calls for)
