I added bell pepper, egg, and heavy cream to the meatball mixture. For more flavor and tenderness.

it is one of my favorite comfort food dinners to make. I have made some alterations. I use shredded parmesan and also I brown all the meatballs in one pan then set them aside and start the sauce in the same pan to take advantage of all the good fond.

The meatballs were fantastic. I made them with almond flour-- to make it gluten free and healthier--instead of breadcrumbs, and gluten free flour in the sauce because of my allergy. The meatballs crisp up nicely on the outside which really gives them a wonderful umami flavor.
I added some lemon juice to the sauce because it tasted a bit plain without some...citrus/sour as a compliment to the onion, garlic, and herb.
I think this would be lovely over any grain, pasta, rice, quinoa, or even with some garlic bread or any other dipping bread

These meatballs were the best I've ever had! I was out of chicken stock so I substituted vegetable stock. I used dried thyme, sage, parsley and chives for the herbs. I served them on top of penne pasta. The meatballs were moist, and unbelievably delicious! My guests were elated!
