- 1 1/2 Tbsp. olive oil

- 1/2 red onion (or small white, sliced very thinly)
- 3 cups apple cider vinegar (or white, or more as needed)
- 2/3 cup cranberries (whole fresh or frozen and defrosted)
- 2 Tbsp. olive oil
- 1 1/2 Tbsp. maple syrup
- 2 Tbsp. white wine vinegar
- 1 pinch salt
- 5 cups baby spinach (or sub arugula, kale or other leafy green)
- 3 Tbsp. roasted pepitas (or raw, pumpkin seeds; see note)
