Description
For some families, serving turkey tetrazzini the day after Thanksgiving is as much a tradition as the holiday feast. The creamy pasta casserole, made with sauteed mushrooms, two kinds of cheese, and sherry puts a whole new spin on leftover turkey and green beans. Keep this comfort food special in mind the rest of the year, too — it’s great made with cooked chicken or roast turkey from the deli. The recipe, which makes 8 cups, is a Yummly original created by The Electrified Cooks.

- 8 oz. spaghetti
- nonstick cooking spray (or a little vegetable oil)
- 1 small onion
- 5 1/2 Tbsp. salted butter (divided)
- 1/2 cup panko breadcrumbs
- 6 oz. sliced mushrooms (about 2 1/2 cups)
- 2 Tbsp. dry sherry
- 2 cups cooked turkey (diced, 9 oz.; or use cooked chicken)
- 1 1/2 cups chicken broth (or turkey stock)
- 3/4 cup milk
- 3 Tbsp. all-purpose flour
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 1/2 cups green beans (cooked, cut into 1 1/2-inch pieces; or thawed, frozen green beans or peas)
- 1/2 cup shredded Gruyere cheese (or Swiss cheese)
- 3 Tbsp. grated Parmesan cheese
- 1 1/2 Tbsp. chopped fresh parsley

Directions
- Preheat oven to 350°F with a rack set in the upper third. Begin heating a large pot of covered water. When it boils, cook spaghetti according to package directions until it’s barely tender to bite (al dente), as it will cook more in the oven. Meanwhile, continue with recipe.
- Spray a 2-qt. shallow casserole with cooking spray and set aside. Chop onion and set aside. Melt 1 1/2 Tbsp. butter and toss in a bowl with panko; set aside.
- Melt 2 Tbsp. butter in a medium nonstick frying pan over medium-high heat. Add mushrooms and cook, stirring often, until they’re lightly browned and any liquid has cooked away, 6-8 minutes.
