I adjusted a few things and used chipotle chili powder instead of the regular chili powder and added diced green bell peppers. Awesome dish!

Ok seriously...this dish is the BOMB! My picky eater loved it and asked if he could have it again for lunch. Thank God I doubled the recipe.

Love this recipe. Make it every few weeks for my family. It is easy, turns out great every time, and only uses one pot which makes clean up a breeze. Great weeknight meal.

Very filling on its own, without taco shells or tortillas. Subbed cooked brown rice for quinoa, which cut down on simmer time.
