Turkey Smash Burger Tacos with Special Sauce

Take a smash burger and cross it with a taco and you have a smash burger taco. This version, made with ground turkey, elevates the trendy dish with sharp cheddar, arugula (or crunchy lettuce, if you prefer), and a delicious, creamy sauce to drizzle. No special equipment is needed to smash the burgers, and you just shape them to match the size of the tortilla. You can prep everything up to a day in advance, but serve these soon after you make them, as they’re best hot. The recipe is a Yummly original created by Kate McMillan.
Ingredients
- 1/2 cup mayonnaise
- 3 Tbsp. ketchup
- 2 tsp. Worcestershire sauce
- 2 tsp. Sriracha hot sauce (or 3 tsp. if you want more heat)
- 2 tsp. kosher salt (divided)
- 1 cup cherry tomatoes
- 1 lb. ground turkey
- 1/2 tsp. black pepper
- 8 flour tortillas (small, 5-6 inches)
- 2 Tbsp. extra-virgin olive oil (divided)
- 8 slices sharp cheddar cheese (pre-sliced cheese, 8-9 oz. total)
- 2 cups arugula (or shredded romaine lettuce)
Directions
- Preheat oven to 200°F and set a sheet pan in it.
- Make special sauce: In a small bowl, stir together mayonnaise, ketchup, Worcestershire, Sriracha, and 1 tsp. salt. Set aside. Cut tomatoes in half and set aside.
- In a large bowl, combine turkey, remaining 1 tsp. salt, and pepper. Divide into 8 equal portions.
