- 1 1/2 cups beef broth
- 3 tsp. all-purpose flour

- 3/4 cup frozen peas
- 3/4 cup diced tomatoes (I used a combination of Hunt’s Diced Tomatoes and Ro-tel Tomatoes, drained)

- 1 lb. red skinned potatoes (cubed)
- 1 Tbsp. butter
- 1/2 cup milk
- 1/3 cup shredded sharp cheddar (plus 2 tablespoons for the top)
- 3 scallion (chopped, divided)

it was overall good. but way to much potatoes. will definitely make more filling and less potatoes next time.
