Turkey Meatballs with Sweet and Salty Dunk Sauce

These Asian-inspired appetizer meatballs are tender and slightly sweet from pineapple and red pepper, perfect partners to the bright and zesty dunking sauce. Both the flavor of the sauce and the texture of the meatballs are best after a day’s rest, so this dish is an excellent do-ahead party dish. You can even make the meatball mixture a month ahead, freeze the balls on a tray until firm, and then bake them frozen. The meatballs are also excellent for dinner on a bed of rice with a few spoonfuls of sauce drizzled on top. If you have it, a 1-ounce (2-tablespoon) ice cream scoop makes quick work of shaping the meatballs. The recipe is a Yummly original created by Martha Holmberg.
Ingredients
- 1 Tbsp. minced garlic (divided)
- 5 Tbsp. reduced-sodium soy sauce (divided)
- 3 Tbsp. fish sauce (Thai or Vietnamese, divided)
- 1/4 cup fresh lime juice
- 1/4 cup shredded carrots (finely shredded; use a Microplane or small shredding holes of a box grater)
- 3 Tbsp. sugar
- 2 Tbsp. green onions (finely sliced)
- 1 Tbsp. jalapeño chilies (minced)
- 1/2 cup water
- 1 Tbsp. vegetable oil (plus more for oiling pans)
- 1/2 cup finely chopped green onion
- 2 lb. ground turkey (not turkey breast)
- 1 1/2 cups panko breadcrumbs
- 1 cup finely chopped fresh cilantro (plus cilantro sprigs for serving)
- 8 oz. crushed pineapples (1 can unsweetened, drained)
- 1 roasted red peppers (finely chopped; from a jar)
- 1 Tbsp. toasted sesame oil
- 1 Tbsp. sriracha sauce
- 1 tsp. ground ginger
- 1/2 tsp. salt
Directions
- Put 1 teaspoon garlic, ¼ cup soy sauce, 2 tablespoons fish sauce, the lime juice, carrot, sugar, sliced green onion, and jalapeño into a medium bowl and stir until sugar is dissolved. Stir in water. Taste and adjust seasonings until sauce is nicely balanced between sweet, salty, tangy, and slightly spicy. Set aside, or refrigerate in an airtight container up to 2 weeks.
- Pour 1 tablespoon oil into a large frying pan over medium heat. Add chopped green onions and remaining 2 teaspoons garlic and cook until soft and fragrant but not browned, about 2 minutes. Transfer to a plate and let cool completely. Set frying pan aside to use in step 5.
- Preheat oven to 375°F.
