- 1/2 leek (pale part, roughly cut, or 2 spring onions)
- 1 handful fresh parsley (about 10 g)
- 3 mint leaves (if available)
- 5 sprigs fresh thyme leaves (only, 1 tablespoon thyme leaves)
- 1 clove garlic
- 1 lime
- 600 grams turkey (mince, ground, or 5 chicken thighs ground up, skin and bone off)
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. coconut oil
- 2 Tbsp. olive oil
- 1/2 leek (green and pale part)
- 5 lemon (peels of)
- 1 large carrot (peeled and diced into halves)
- 1 potato (large white, or 1 parsnip, peeled and diced into small cubes)
- 3 cloves garlic (sliced)
- 1 tsp. cumin seeds (or ground up cumin powder)
- 2 star anise
- 3 cups chicken stock
- 1 1/2 Tbsp. fish sauce
- 1 pinch salt
- 1 pinch black pepper (or chilli flakes)
- 12 kale leaves (torn off the stem and into smaller pieces)
- 1/2 freshly squeezed lime juice
- 1/2 fresh squeezed lemon juice (small, about 2 tablespoons)

This was really good! It had a nice, light lemon/lime flavour. I did add more chicken broth at the end as I didn’t think there was enough.
