- 2 pkg. Shady Brook Farms Turkey Thighs
- 2 Tbsp. olive oil
- 1 white onion (medium, sliced)
- 1 tsp. garlic (minced)
- 1 tsp. fresh thyme
- 1 tsp. salt
- 1 tsp. coarse ground black pepper
- 2 cans stewed tomatoes (14 ounces each, Italian or Cajun)
- 1/2 lb. fresh mushrooms (sliced)
- 4 cups rice (or pasta, cooked)

Directions
- In a large saucepan over medium heat, brown turkey thighs in olive oil.
- Add remaining ingredients and bring to a boil. Simmer over low heat for 1 hour.
- Remove turkey from saucepan; remove skin and shred meat. Return meat to saucepan and serve over rice or pasta.
