It was good and I'll make it again but I will increase the cumin and add some chili powder. I liked this but it needa some heat. I also added corn and a little rice. I'll make again!

My poblanos were small so I cooked 6 and made 1 1/2 a serving. Didn’t have green pepper so used my husband’s cayenne pepper, only not as much. Wow! Snappy! But, we like it that way. Used shredded chicken and 1/4 lb. chorizo. Homemade enchilada sauce. 😋 Oh, used kitchen shears to cut the poblanos and spoon to scoop seeds.

Received three rave reviews. Made too much stuffing, could have stuffed a couple more peppers. Doesn’t matter, these turned out great.

This was great. Fairly easy to make and my family loved it. I am making it again to store for meals during the week.
