- 8 cups turkey stock
- 4 cups cooked turkey (coarsely chopped, light and dark meat)
- 3/4 cup vegetable oil
- 3/4 cup all purpose flour
- 1 cup chopped onion
- 1/2 cup green pepper (chopped)
- 1/2 cup chopped celery
- 1 Tbsp. chopped garlic
- 2 cups andouille sausage (bite-sized chunks of, or smoked kielbasa)
- 1 tsp. salt
- 1 tsp. ground cayenne pepper
- 1/2 tsp. freshly ground black pepper
- 1/4 cup flat leaf parsley (chopped)
- 1/4 cup green onion (chopped)
