Tuna Steaks with Pepper and Olive Salsa

  • 7 ounces wild rice
  • 1 tablespoon butter
  • 2 red bell peppers (deseeded and finely diced)
  • 2 ounces pimento stuffed green olives (sliced)
  • 1 pinch fresh oregano (chopped coarsely)
  • 1/2 lemon (juiced)
  • 1 pinch sugar
  • 4 tablespoons oil
  • 4 tuna steaks

    Directions

    1. Cook rice in boiling salted water according to package instructions. Drain then mix with butter and season.
    2. For salsa, mix peppers, olives, oregano, lemon juice, sugar and 2 tbsp of oil. Season to taste.
    3. Heat 1-2 tbsp oil in a large non-stick pan and sear tuna for 2-3 mins on each side. Transfer to serving plates, add salsa and serve with rice.
