- 2 cans tuna packed in olive oil (5 oz. size, see notes; you can use only one can of tuna if you prefer less tuna)
- 2 cups cucumbers (chopped garden, chopped large)
- 1 cup chopped fresh parsley (coarsely, more or less to taste)
- 1 cup chopped fresh mint (coarsely, more or less to taste)
- 1/2 cup thinly sliced green onions (white and green parts)

- fresh ground black pepper
- 3 Tbsp. extra virgin olive oil
- 2 Tbsp. lemon juice (fresh-squeezed, see notes)
