Tuna noodle casserole from 6 o clock scramble
Ingredients

- 8 oz. wide egg noodles
- 1 tomato (diced)
- 1 cup shredded cheddar cheese
- 1 zucchini (medium, quartered lengthwise and thinly sliced)
- 3 stalks celery (finely chopped)
- 6 oz. chunk light tuna (we love Wild Planet brand, drained and flaked)
- 1/2 tsp. dried dill (or use 1 1/2 tsp. minced fresh)
- 1/2 tsp. salt
- 2 Tbsp. reduced fat mayonnaise
- 1/3 cup nonfat sour cream

Directions
- Preheat oven to 350. Grease 8x8 casserole. Cook noodles according to package instructions--just short of cooking time, they will continue to cook in the oven
- Combine sour cream, mayonnaise, salt and dill
- Combine tuna, noodles, zucchini and celery. Add in sour cream mixture.
- Bake for 25 minutes. Top with cheese and tomatoes and bake for 5 more minutes
