- 1/2 cup celery (finely chopped)
- 1/3 cup yellow onion (or red, finely chopped)
- 2 Tbsp. Dijon mustard
- 3 Tbsp. parsley (chopped, more for garnish)
- 1/2 tsp. salt (and pepper)
- 6 English muffins
- 4 tomatoes (medium-large, enough to produce 12 slices for the tuna melts)
- 10 oz. cheddar cheese (sliced, 12 slices for the tuna melts)
