- 1 cup bean (TruRoots Organic Sprouted, Trio according to package directions = 3 cups cooked*)
- 3 Tbsp. coconut oil (divided)
- 1 1/2 lb. ground turkey (or beef)
- 3 Tbsp. taco seasoning mix (mild, if your stomach is super-sensitive, then use 1 tsp ground cumin, 1/2 tsp turmeric powder and 1/2 tsp cinnamon powder instead of the taco seasoning mix)
- 1 tsp. ground coriander (cilantro)
- 1 tsp. dried oregano
- 2 Tbsp. tomato paste
- 1 1/2 cups chicken broth
- 1/2 cup mild salsa (optional)
- 14.5 oz. crushed tomatoes (or coarsely chopped tomatoes packed in puree)
- 2 carrots (peeled and diced)
- 1 onion (medium, finely chopped, optional)
- 2 cloves garlic (diced)
- 3 zucchini (medium, diced, or 1.5 cups chopped green beans if you prefer)
- 1 cup cheddar cheese (shredded raw)
- 1 cup sour cream
- 4 green onions (chopped)
