- 12 cups salad mix (baby lettuce and arugula is what I used)
- 1 avocado (firm but ripe, cubed)
- 1 cup red grape (or small cherry tomatoes, sliced in half)
- 1 cup bell pepper (diced, I use red)
- 1/4 red onion (thinly sliced)
- 1 mango (medium, cubed)
- 4 Tbsp. coconut flakes (toasted, unsweetened)
- 1 lb. scallops (large divers, about 10, rinsed and dried)
- sea salt
- pepper
- 6 Tbsp. grapeseed oil
- 1 lime
- 2 tsp. honey
- 2 Tbsp. balsamic vinegar (coconut, or white balsamic or white wine vinegar)
- 4 Tbsp. chopped cilantro (roughly)
- salt and ground black pepper (to taste)
