I wanted to make this salad for a dinner just before Thanksgiving that I attended. At the last minute I had to adjust it to be dairy free. When my Mom made it when I was a kid she used miracle whip and sour cream. We all loved it. Both versions were not dairy free. So, for the piña colada yogurt I made a piña colada jello by doing the following:
1. Grind an 8 ounce can of untrained crushed pineapple in a food processor until it was very smooth.
2. Heat 1/2 cup in the microwave until it was very hot.
3. Sprinkle 1 envelope of unflavored gelatin eon top and let it soften for 5 minutes.
4. Add 1/2 cup of cream of coconut and stirred to combine.
5. Refrigerate until thickened then fold into the cool whip.
Now this ambrosia is dairy free. It tasted just like I remembered.
