- 1 1/4 cups sugar
- 1 3/4 tsp. baking powder
- 2 tsp. Spice Islands Ground Saigon Cinnamon
- 1 1/2 tsp. salt
- 1 tsp. Spice Islands Pure Vanilla Extract
- 3 eggs
- 3/4 cup Mazola Corn Oil
- 1 cup mango (diced, about 1 medium mango)
- 8 oz. pineapple (tidbits, well drained)
- 1/4 cup macadamia nuts (chopped)
- 1/2 cup shredded coconut

Directions
- Preheat oven to 350°F.
- Stir together flour, sugar, baking powder, cinnamon and salt in a large bowl.
- Make a well in the dry ingredients and add vanilla, eggs, oil, fruits, nuts and coconut; mix well.
