Description
I love this recipe because of the layers of flavors it presents like a true curry is supposed to. It encompasses a wide pallet. The first bite brings sweetness and spice to your tongue but a plethora of flavors and complexity emerges as one continues savor it in ones mouth. I was inspired to make this from the Goan Fish curry that uses coconut. I love how the tropical flavors of mangoes, pineapples, and coconuts blend together so I decided to give it a twist with the sweetness of the mango and the spice of Chipotle. But one is free to skip the Chipotle if they so desire.
Ingredients
- 1 kg filet (Any white fish, tilapia, flounder, etc cut into 2 inch chunks)
- 1/2 cup coconut milk
- 1 cup mango (or more, chunks)
- 1 chipotle pepper in adobo sauce (sliced, optional)
- 7 basil leaves
- 1/4 cup oil
- 1/2 yellow onion (small)
- 2 tsp. minced garlic
- 2 tsp. minced ginger
- 7 green cardamom pods
- 1/4 cinnamon stick
- 4 cloves
- 1 tsp. cumin
- 7 dried red chili
- 1 tsp. red chili powder
- 1/2 tsp. turmeric
- 2 tsp. salt (or to taste)
- 2 tsp. lime juice
- 1 tsp. tomato paste
- water (as needed)
Directions
- Rest your fish chunks in water, lime, and 1 teaspoon salt for 10 minutes. This step is optional, but it will get rid of the fishy smell that is very strong in Tilapia and some other white fish.
- While the fish is resting, roast your whole spices (Cardamom, Cinnamon, Cumin, Cloves and Dried Red Chilis) by putting them in a pan on med high heat until you can smell the aroma. Turn off the flame and take the pan off of the hot stove when you start hearing the cackle and start smelling the aroma.
- Add your roasted whole spices to the spice grinder (you may leave them whole if you do not have a spice grinder) with your powered spices (Turmeric, Red Chili powder, and Salt) and blend them together until they are all part of the same powder.
