- 1/2 cup vegetable oil (or canola oil, or melted coconut oil)
- 2 large eggs (at room temperature2)
- 1 tsp. pure vanilla extract
- 1 cup hot coffee (freshly brewed strong)
- 1 1/4 cups unsalted butter (2.5 sticks or 290g, softened to room temperature)
- 4 cups confectioners sugar
- 3/4 cup unsweetened cocoa powder
- 5 Tbsp. heavy cream (or half-and-half)
- 1 tsp. pure vanilla extract
- 3/4 tsp. salt (to taste)

This cake is amazing. Very very rich and dark and moist. Not insanely sweet since there’s so much dark chocolate in it. It is everything you could want in a dark chocolate cake. FYI I used instant coffee instead of espresso powder and it worked perfectly in my opinion.

This cake was so delicious! I added a 1/4 cup less sugar. My go to chocolate cake from now on. Moist, extremely chocolatey, absolutely 100% awesome!

I made this cake for my husbands birthday and it turned out really good. I was looking for a cake that was rich in chocolate but not sweet and that is what I got. Everyone really enjoyed it. Personally, I found the icing a tad sweet and will maybe try using less icing sugar and more cocoa next time. I did bake it into a 9 x 13 and I had quite a bit of frosting left over (1 1/2 cups?) Guess I will just have to make some cupcakes since the cake is pretty much gone 😉
