- 2 bay leaves (small)
- 2 Tbsp. ketchup
- 2 cups long-grain rice (uncooked)
- 3 cups butternut squash (large dice)
- 15.5 oz. beans (can pigeon, rinsed and drained)
- 13.5 oz. coconut milk (can, 1¾ cups)
- 1 tsp. chicken bouillon (optional)
- 2 tsp. spices (creole)
- 1 tsp. paprika (optional)
- 3 1/2 cups chicken broth (or more, or water)
- 1 whole pepper (scotch bonnet)

What an amazing recipe! A few minor tweaks were made. i substituted her green sauce for a creole seasoning paste/mix I found in store. I also substituted the scotch bonnet pepper with habanero chiles which I think may have increased the heat level a bit. Beyond that, I followed the recipe and it is amazing! The flavors are so rich and complex, it's hard to believe I made it. It's the perfect combo of sweet and spicy. The heat level was pretty intense though, so if you dont like heat, definitely sub out the pepper for something more mild.
