My old fashion version is ground the meat, potatoes, and onion together. Form into a patty large enough to fit in a cast iron pan. Cook medium heat about 10 minutes flip and cook for 7 minutes. Divide into 1/8th's and lay a fried egg on top with ketchup. Presently I have a cooked flat from a brisket which I will chop add grated (raw) potatoes and onion.. Fry and serve as above. The flat (about 6lbs) was oven cooked at 275 for 5 hours sitting on 1/4 onions wrapped in foil.. Very tender and the juice made wonderful gravy..
