- 1 garlic clove (peeled and smashed)
- olive oil (to drizzle)
- 1 lb. Italian bread (loaf of day old, sliced)
- 8 oz. fresh mozzarella cheese (cut into cubes, grated mozzarella will do)
- 3 tomatoes (large, chopped, or an equivalent amount of cherry tomatoes, halved)
- 1 cucumber (small, chopped)
- 1/2 cup purple onion (chopped, and rinsed)
- 1/2 cup Kalamata olives (pitted and halved)
- 1/2 cup fresh basil leaves (chopped, don't chop these till just before you're ready to serve, to avoid having the leaves turn brown prematurely)
- 1/2 cup extra virgin olive oil
- 1/4 cup balsamic vinegar (or red wine vinegar)
- 3 cloves garlic (minced)
- 1/2 tsp. freshly ground black pepper
- 3/4 tsp. sea salt
