- 1 jalapeno chile (stems, ribs, seeds removed, finely chopped)
- 1 lime (plus more to taste, I prefer juice from 1½ limes)
- 1/4 cup chopped cilantro (finely, you can go up to ½ cup if you really like it)
- 1 tsp. kosher salt (plus more to taste)
- 1/4 tsp. freshly ground black pepper (plus more to taste)
- 1/2 tsp. Mexican oregano (dried, rub between finders before adding to the salsa)
- 1/8 tsp. ground cumin (optional, add it if you like it)
- 4 cups tomatoes (finely chopped vine-ripened)
- 1/2 cup fresh cilantro (coarsely chopped)
- 2 whole green onions (finely sliced)
- 2 serrano chiles (with the seeds, finely chopped or minced)
- 3 cloves garlic (minced)
- 1 lime
- 1/2 tsp. kosher salt (plus more to taste)
