- 8 oz. smoked salmon (Northwest-style hot)
- 2 cups whole milk
- 1 bay leaf
- 10 black peppercorns
- 5 parsley (leafy sprigs, separated into leaves and stalks)
- 10 oz. white fish (firm-fleshed, boned and skinned, this is a good place to experiment with cheaper varieties)
- 5 oz. prawns (medium, shells removed)
- 3 Tbsp. all purpose flour
- 3 Tbsp. butter
- 1/2 cup half-and-half cream
- 1/2 cup white wine (optional)
- 2 anchovies (finely chopped, optional)
- 1 handful sorrel (large, finely-shredded, or substitute baby spinach)
- 1 handful baby spinach (large)
- salt
- pepper
- butter (to grease the pan)
- 2 Tbsp. grated Gruyere
- 1 Tbsp. grated Parmesan
- 2 Tbsp. white breadcrumbs (stale, optional)
