- 2 oz. butter (good quality)
- 2 oz. suet (use 2 more ounces of butter if you don’t want to use suet, which is beef fat)
- 7 oz. dark brown sugar (I used light brown sugar and added a tbsp of molasses/treacle)
- 2.5 oz. all purpose flour
- 1/2 tsp. baking powder
- 1 tsp. mixed spice (or use 1/2 tsp cinnamon, 1/4 tsp nutmeg and 1/2 tsp allspice)
- 2 eggs
- 5.5 oz. fresh breadcrumbs
- 6 oz. sultanas (white raisins)
- 6 oz. raisins (note: I soaked my raisins in brandy, overnight)
- 3 oz. zante currants
- 1 apple (small, peeled, cored and grated)
- 1 fresh orange (or lemon)
- 1 fresh orange
- 5 oz. brandy
- 3 Tbsp. candied peel (optional)
- 1/4 cup chopped almonds (optional)
