- 1/2 lb. goose fat (fresh free range pure, not skin, mine came from the carcass and between the skin and meat of the whole goose)
- 1 lb. ground pork (fresh natural organic, with 25% fat)
- 2 tsp. grey salt (course ground french)
- 1/2 tsp. whole nutmeg (fresh micro-planed organic)

- 5 cloves garlic (fresh organic, fine chopped)
- 1/2 onion (large fresh organic, fine chopped)
- 1/2 cup wine (Riesling, chilled)
- 1 hog casing (unit natural, from local butcher, enough to do 5 to 6 lbs of sausage, refrigerate)
- 3/4 cup cherry (organic, wood chips for smoking on grill)
