- 1/4 cup extra virgin olive oil
- 2 Tbsp. champagne vinegar
- 1 tsp. mustard
- 1 clove garlic
- 1 Tbsp. lemon juice
- 3 Tbsp. tarragon leaves (fresh, stripped from the stem)
- salt (to taste)
- 2 handfuls romaine lettuce (chopped)
- 4 oz. canned tuna (your favorite, I love the kind that is packed in olive oil.)
- 2 eggs (hard cooked, rough chopped)
- radishes (several, sliced in half or quartered)
- baby cucumber (a small, sliced)
- 1 handful cherry tomatoes
- new potatoes (several small cooked, or pee wee potatoes, I used white and purple. halve, quarter, or slice them, depending on size.)
- beans (a cup of cooked fresh green or green and yellow waxed, cut in bite sized pieces)
- 1 handful pitted olives (sliced or halved if large)
- 1 Tbsp. capers
- white beans (a cup of canned)
- salt
- cracked black pepper
