- 12 oz. roasted red peppers (jarred, water packed, drained and sliced)
- 1 1/2 cups chickpeas (cooked, or 1 15-oz BPA-free can unsalted chickpeas, drained and rinsed)
- 1 cup white mushrooms (thinly sliced)
- 5 pepperoncini (stemmed and thinly sliced)
- 5 Tbsp. extra-virgin olive oil
- 3 Tbsp. Pecorino Romano cheese
- 1/2 tsp. dried oregano (each, and sea salt)
