  • 1 tablespoon jalapeno (diced, I use jarred)
  • 1 can green chiles (chopped, 4.5 ounce, not drained)
  • 1/2 teaspoon ground red pepper
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1/2 cup fresh cilantro (loosely packed)
  • 2 tablespoons minced garlic (I use jarred)
  • 12 corn tortillas (hand ripped)
  • 2 cans whole kernel corn (15 ounces each, drained)
  • 2 cans black beans (15 ounces each, drained and rinsed)
  • 2 cans red kidney beans (dark, 15 ounces each, drained and rinsed)

    This was good. I made it in my instapot and it was pretty simple. It says 8 servings but it’s more like 12-14! I think I would use fewer beans next time, but that’s just a personal preference. Definitely one I’d make again.
