  • 1 tablespoon butter
  • 1 onion (peeled and finely diced)
  • 1 clove garlic (peeled and finely chopped)
  • 2/3 pound spinach (coarsely chopped)
  • 2 cups vegetable stock
  • 1/2 pound mascarpone cheese
  • 2 1/4 pounds tortellini
  • 1 teaspoon olive oil
  • 1/4 pound chanterelle mushrooms (cleaned)

    Directions

    1. Heat the butter in a frying pan and sauté the onion and garlic until soft. Add the spinach and cook until wilted. Season then deglaze with stock. Stir in mascarpone (or whipped cream cheese, if using) and simmer for 5 mins.
    2. Meanwhile, cook the tortellini in boiling salted water according to the package directions. Heat the oil in a second pan and sauté the chanterelles for 3 mins. Toss tortellini with sauce then arrange on plates and top with chanterelles.
