- 1/4 cup chile (raw hatch, roughly chopped)
- 2 oz. silver tequila (quality, we love 1800 Silver)
- 2 oz. lime juice (freshly squeezed and strained)
- 2 oz. simple syrup (hatch chile, see recipe below)
- ice
- 1 cup organic sugar
- 1 1/2 cups water
- 3 star anise pods
- 10 whole green cardamom pods
- 1 cinnamon stick
- 25 whole pepper corns (back)
- 3 bay leaves
- 15 whole coriander seeds
- 1 chile (hatch, roughly chopped, leave the seeds and pith for added heat!)
