The egg was lovely and fluffy, which I didn't expect. The shallots & tomatoes caramelized a little so when I turned the frittata out onto a plate it was a little more browned than is appetising (though it didn't put me off). I need to get a large cast-iron skillet. I used a Le Creuset pot which, I think, wasn't large (wide) enough.

This turned out really well. I added some leftover chicken and an extra egg. It was a quick, low fuss dinner. I will definitely make it again.
