  • 4 tomatoes (deseeded, chopped)
  • 1/2 red onion (peeled, finely chopped)
  • 1/2 teaspoon sugar
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons extra-virgin olive oil
  • 12 slices bread (baguette)
  • 1 clove garlic (halved)
  • 2/3 cup feta (crumbled)
  • 10 fresh basil leaves (finely shredded)

    Directions

    1. Place tomatoes, onion, sugar, vinegar and 2 tsp oil in a bowl and mix well. Chill for 15 mins.
    2. Meanwhile, brush both sides of the bread with the remaining oil. Heat a grill pan over a medium-high heat. Grill bread for 2 mins each side or until golden. Rub cut side of garlic over one side of each bread slice.
    3. Add feta and basil to tomato mixture and stir to combine. Spoon tomato mixture over bread slices. Serve.
