I really enjoy making this recipe on a warm summer evening when I can pick the tomatoes and cucumbers fresh from my garden.
Ingredients

- 1 pt. cherry tomatoes
- 2 cucumbers
- 1 tsp. sea salt
- 1 Tbsp. olive oil
- 3 Tbsp. basil
- 1 Tbsp. mint
- 1 tsp. balsamic vinegar
- 1/4 cup red onion
- 1 pinch pepper

Directions
- Slice cucumbers into 1/4 inch rounds
- Slice tomatoes in half
- Combine all ingredients in a bowl & stir. Season to taste with additional salt & pepper
